Ingredients You Need for Coconut Ice [Vegan]

  • 8.75 ounces condensed milk (recipe below)
  • 8.75 ounces icing sugar
  • 8.75 ounces desiccated coconut
  • red food coloring
 For the condensed milk
  • 2 cups coconut milk
  • 1 cup sugar
  • a pinch of salt
  • 1/2 tsp pinch of vanilla extract

How to Prepare Coconut Ice [Vegan]

  1. Put all the ingredients for the condensed milk in a pot.
  2. Bring to the boil then turn the heat down to medium for 2 hours.
  3. Once cooled, add icing sugar and coconut to the condensed milk. It should be the consistency of pastry dough.
  4. Split the mixture into two. Add a few drops of color into one to turn it pink.
  5. Spread the white mixture into a glass dish, then top it with the pink mixture. Refrigerate overnight.
  6. Cut into squares. Shape with hands to smooth if desired. Then refrigerate again for an hour to keep them compact.
