How to Prepare Fried Guacamole Two Ways [Vegan]

To Make the Faux Fried Guacamole:

  1. Simply spoon a small dollop of guacamole onto each pepper wedge and sprinkle with tortilla chips. Garnish with cilantro.

To Make the Real Fried Guacamole:

  1. Place heaping tablespoon-sized dollops of guacamole onto a parchment-lined plate, cover with plastic wrap and freeze for about one hour.
  2. Meanwhile, heat oil to 375°F and combine the 1 cup of flour, cornstarch, salt, and bubbly water in a bowl and whisk to combine. Place the remaining 1/4 cup of flour in a small bowl.
  3. To coat the guacamole, first roll each of them in the flour, tapping off excess, then dip into the batter. Dip each guacamole round in the batter a second time, then top with the crushed tortilla chips.
  4. Fry in oil for about 3 minutes, or until golden brown.
  5. Serve immediately, as guacamole does not keep longer than about an hour or so.
